Meet the Chef
18 years of cooking in professional kitchens has seen new Executive Chef, Ryan O'Halloran, work under some award winning chefs in a range of different locations from Outback Australia and down the east coast of Queensland.
During this time Ryan took a short break from cooking in the industry to fulfil a goal of teaching cookery having been inspired by his time as an apprentice and student and the relationships he developed with his coaching chefs. His time as a teacher in professional cookery saw him being mentor to successful young chefs one of which was former Tamanu Executive Chef Matthew Peters.
Ryan's passion for capturing the essence of primary ingredients, using combinations that enhance rather than obscure, is his driving force to seducing food lovers with quality cuisine that is predominantly French inspired but uniquely his own. Combining the best of Vanuatu's produce and classical technique, his food is intimately elegant and comforting. Seasonal menus make the most of nature's bounty and with a lavish feast of colour, tastes and textures that inspire, Ryan and his team are eager to delight your senses.
