Meet the Chef
In 2011, Tamanu on the Beach secured the services of a young, dynamic Executive Chef, Matthew Peters. Matt moved from Australia into his first foray as Executive Chef in a privately owned and operated South Pacific resort. He brought with him his sense of adventure, unbridled spirit and an unwavering commitment to food excellence.
Training, inspiring and driving his ni-Vanuatu team of 3 chefs and kitchen brigade to recognize the importance of flavor, texture, presentation and consistency, Matt set about to improve the already well established reputation of Tamanu on the Beach. He redesigned the menu to include an edgier fusion of South Pacific and French cuisine whilst retaining some of the classic dishes for which Tamanu is renowned.
Matt has succeeded in bringing to life a modern menu always using the freshest of local produce and seafood. This menu is complimented by an ever changing Specials Menu which provides the guest with so much choice they find it difficult to make a decision.
