The restaurant has earned a highly respected international reputation for delivering the most distinctive cuisine, featuring local organic meat, indigenous produce from the Port Vila markets and the freshest of seafood.
Tamanu's signature dish, Lobster Mornay uses that day's freshly caught reef lobster and Tamanu's signature dessert, Grand Marnier Souffle have become so highly acclaimed that guests who have tasted them once, return time and again. Each meal is lovingly prepared by our ni-Vanuatu chefs who pride themselves on their creativity and authenticity, bringing sensational nuances to each dish working under the experienced and passionate guidance of the Resort's young, dynamic Executive Chef from Australia, Matthew Peters.
Complimented by an extensive wine selection to tantalise your palate, each dish is served by our friendly ni-Vanuatu staff who are trained to deliver an outstanding dining experience in authentic style.
